Charling Bolllicine, Trying Something New In Italy!

It is always very exciting to meet someone who is trying to do things differently and spares no efforts into finding a way to make them work. More especially in a country like Italy, where everybody keeps saying that the economy is a total disaster and that nothing is happening. 

Alessandro Fedalto is such a person. His project, Charling, is a sparkling wine made in the Charmat method from organic Chardonnay and Riesling grapes grown in the region of Treviso of Northern Italy.

Fascinating Tasting Experience - Chateau Mouton Rothschild 1967 In Less Than Optimum Condition...

Fascinating experience tasting Chateau Mouton Rothshild 1967 last night w/ low ullage (wine below bottle shoulders) by > 3 cm. Thanks to the generosity of a student (nowadays, to bring an apple to the teacher does not cut it anymore!), we had an insightful learning experience!

After removing a very crusted capsule, the cork completely collapsed. It was soaked w/ wine & smelled of a very old tawny port.
